Many colleges offer programs in sustainable agriculture. The National Sustainable Agriculture Information Service website has a list of American colleges with programs here:

The USDA has a list that includes Canadian and other international colleges and universities:

See: the Northeast Organic/Sustainable Agriculture Education Directory maintained by NOFA (Northeast Organic Farming Association) for “a variety of educational programs devoted to sustainable / organic agriculture. The directory includes programs offered in Connecticut, Massachusetts, Maine, New Hampshire, New Jersey, New York, Pennsylvania, Rhode Island, and Vermont. ” http://www.nofamass.org/programs/ageddirectory.php

This site offers a comprehensive list of school programs, internships, and apprenticeships by state: http://www.nal.usda.gov/afsic/pubs/edtr/EDTRCollegesU_W.shtml
