I couldn’t find any information on casinos in Las Vegas doing so, however, the Peppermill Hotel and Casino in Reno uses geothermal energy. Since 2007, the casino has been using geothermal energy to heat the water in its hotel rooms and pools. This is very impressive because it is a massive building with over 1600 guestrooms. The Peppermill invested $9.7 million into this project.
The Rio All Suites Hotel and Casino in Las Vegas uses a very large combined heat and power (CHP) generating system. Two distinct generator total 6 reciprocating gas engines wit catalytic emission reduction. Combined the two generators can produce nearly 5 MW.
