Potatoes often get a bad rap because of their high starch content. They are however, if cooked properly, a healthful source. Potatoes are low in fat and the skin is high in vitamin C. It is a moderate source of iron and a good source of B vitamins. It is also high in potassium, magnesium, and phosphorous.
A normal sized potato is a good source of iron, in addition to fiber, vitamin C, and potassium. Thus it is a healthy part of a balanced diet. As long, of course, as they are not deep fried and given as part of a fast food meal.
