More Americans are getting fed up with the current industrial agricultural food practices used throughout the country so many more Americans are eating healthier. By and large, however, obesity and diabetes rates continue to rise and fast food chains continue to prosper. As long as healthy, healthful food can’t compete with fast food by cost and convenience (due in large part by farm subsidies), people will opt for the easier, less nutritious option. The good news is that more people are starting to mobilize to reform food practices, or “opting out”. There are community initiatives, it’s practically becoming its own genre for writing and movies, and people really are coming together and eating healthier.
