Are cornmeal pancakes better for the environment than regular ones?

    Tangentially, I would say yes. Using wheat flour in pancakes obviously doesn’t have any discernible effect on the environment (other than the effect it has on your internal environment, of course), but the amount of processing that goes into refining bleached all-purpose flour means a lot more energy needed to power processing machinery as well as more harmful by-products produced as a result of running said flour plants.

    Cornmeal, on the other hand, is a marginally rougher grain meal, with less (albeit not much less) of a process needed to make it, cutting down on the product’s overall carbon footprint.
