Interesting question, I had always thought that bonzai trees were there own special breed, but apparently they are not. I found an article which claims that you can select virtually any species of tree to make into a bonzai tree, and it is the way you trim the tree and roots that keeps the tree contained as a small plant.
There are other methods for creating smaller trees called dwarfing, but that is apparently where you modify the genome to create plants with a smaller maximum growing potential.
